I know pineapple and pizza is this heated debated. I’ve had many conversations arguing whether or not pineapple belongs on pizza. Personally, I’m very much pro-pineapple on pizza (and very much pro-sweet & savory combos in general), but I get it. I get that some people don’t want fruit on there pizza. BUT. When it comes to these Gluten Free Pork and Pineapple Meatballs, there’s no debate. Nope. No debate here with these.

Fresh pineapple is actually technically used to help tenderize pork before cooking, so it’s like a match made in food heaven. Whether you make them for dinner, lunch, or as an app or snack, the tropical flavors in these Pork and Pineapple Meatballs will transport you to a faraway Island, which is much needed right now if I do say so myself.

What are the flavors like in these Gluten Free Pork and Pineapple Meatballs?

The saltiness of the pork pairs perfectly with the sweetness of the pineapple. The addition of scallions and cilantro add a pop of freshness and brightness to the meatballs and even more depth of flavor. I especially love how it only takes a few ingredients to make these, and they have no fillers. No added flours or anything, making it super simple to whip up with only a few ingredients.

Can I Make Substitutions?

I haven’t tried these with ground turkey or ground chicken, as the fat content and texture is definitely different, but let me know if you do!

Ingredients

  • 1 lb 1 ground pork

  • 4 4 scallions, chopped

  • 1/4 cup 1/4 diced pineapple

  • 1 1/2 tbsp 1 1/2 cilantro, chopped

  • 1 1 egg

  • salt, pepper to preference

Directions

  • Mix all ingredients in a bowl until thoroughly combined. Let mixture sit in fridge to develop flavors.
  • Shape meatballs.
  • Heal olive oil in a large skillet over medium-high heat. Add meatballs to sear, turning halfway through to brown on all sides.
