Real talk – sometimes you just get a craving for pie but don’t have the time or the ingredients or the energy to make a whole pie. That’s where Pumpkin and Peanut Butter Bars come in with just as much pie flavor and not as much of the work. We are out here satisfying pie cravings and saving lives one Pumpkin and Peanut Butter Bar at a time.
I never knew peanut butter and pumpkin could be this addicting of a combo but my inability to stop eating these Peanut Butter and Pumpkin Bars basically speaks for itself.
INGREDIENTS For the PB & pumpkin filling:
1/3 cup + 4 tsp of organic canned pumpkin
1/3 cup of peanut butter
1 tsp vanilla
3 tbsp honey
2 1/2 tsp pumpkin pie spice
DIRECTIONS For the PB & pumpkin filling:

In a bowl, mix all of the ingredients together until smooth and combined. (You can also just eat this filling straight up by itself, it’s that good. I might know from experience)
INGREDIENTS For the crust:
1/2 cup of @bobsredmill hazelnut flour
10 small, pitted dates
1 tsp of pumpkin pie spice
3 tbsp hazelnut butter (I used homemade hazelnut butter with cinnamon but @georgiagrinders has some bomb hazelnut butter too)
1 tbsp honey
DIRECTIONS FOR THE CRUST

Combine all of the ingredients for the crust in a food processor.

Line a baking dish with parchment paper and pack down crust mixture into base.

Freeze until firm.

Once firm, spoon the peanut butter and pumpkin filling over the crust layer, spreading evenly.

Set in freezer until it hardens.
