Maple Mustard Air Fryer Salmon Bites – literally just whipped these up for lunch the other and they were so easy to make and so delicious, so I knew I had to share with you. They’re protein packed, full of flavor, and perfect to make for lunch or dinner.

Sweet yet savory, it uses a homemade maple mustard that’s basically like honey mustard but with maple syrup instead because sometimes too much honey makes me bloated. As Healthline talks about, Honey is high in fructose, a type of simple sugar that’s classified as a FODMAP. While I absolutely eat it and incorporate it into my recipes here and there, I do try to limit my intake of things high in fructose on a daily basis as too much of it can upset my stomach. So, if I get a little honey as a sweetener when ordering a matcha out at a coffee shop, I try to make sure I reduce my fructose intake throughout the rest of the day to avoid FODMAP stacking- hence the use of maple in these air fryer salmon bites for lunch. Ya feel me? Anyways, if you personally prefer honey here, you can absolutely substitute it and adjust the amount to meet your flavor preferences. Either way, the tang of the dijon mustard pairs perfectly with a little bit of sweetness here, which also helps to cartelize the salmon bites when cooking in the air fryer.

Ingredients

  • 1 filet 1 of Salmon, cut into cubes

  • 2 tsp 2 dijon

  • 2 tbsp 2 maple syrup

  • 1 tbsp 1 garlic-infused olive oil

  • salt to taste

  • pepper to taste

Directions

  • Combine dijon, maple syrup, and garlic-infused olive oil in a bowl and mix well. Add in salt and pepper to taste.
  • Marinate salmon cubes in the maple mustard sauce (the longer they marinate, the more flavor they will absorb.
  • Air fry (spray basket with avocado oil to prevent sticking) at 390 for 8-10 minutes, flipping halfway, or until salmon is cooked through and golden.
