Easy Sheet Pan Meal: Potato, Leek, and Sausage Bake

If you’re looking for an easy sheet pan meal, I’ve got you covered! This Potato, Leek, and Sausage Bake is the perfect sheet pan meal to make as the temps begin to drop. It’s cozy, comforting, and only requires minimal and ingredients and minimal energy. I don’t know about you, but that’s my kind of meal – where you can just throw everything onto a pan, heat the oven, and let it do its thing.

The crispness of the potatoes and leeks, the depth of flavor from the chicken sausage, and, of course, the beautiful cheese on top – this easy sheet pan meal is a true winner for any time of the year and any time of day. Need dinner in a pinch? This is it. And, it would also work incredibly well as a savory breakfast to prep ahead of time.

It’s also incredibly versatile – feel free to make substitutions based on what you have on hand. For this easy sheet pan meal, you can sub sweet potatoes for the ukon gold potatoes that I use here. You can also incorporate any sausage of your choosing – I personally opt for the chicken sausage from Whole Foods. It’s my favorite, and Low FODMAP friendly for all of my IBS friends out there.

Easy Sheet Pan Meal: Potato, Leek, and Sausage Bake

Ingredients

  • 4 4 ukon gold potatoes

  • 4 4 chicken sausage links

  • 1 1 large leek (green part)

  • 1 tbsp 1 avocado oil

  • 1/2 tsp 1/2 oregano

  • 1/4 cup 1/4 shredded low lactose or dairy free cheese

  • salt, pepper to preference

Directions

  • Preheat oven to 400F.
  • Wash and dice potatoes into approx. 1 inch cubes.
  • Add the potatoes to a parchment lined baking sheet and toss with avocado oil, oregano, salt, and pepper. Roast in the oven for 20 minutes or until slightly fork tender.
  • While potatoes cook, slice chicken sausage into approx. 1/2 inch rounds, and slice leek.
  • After potatoes have been in the oven for 20 minutes, add chicken sausage and leeks to baking sheet, mix well, and roast for another 30 minutes or so – or until everything is golden brown and cooked through.
  • Once out of the oven, top with freshly shredded low lactose or dairy free cheese.
