Dairy Free Macaroni Salad

It’s officially grilling season, & you know what that means – it’s also macaroni salad season! A.k.a. the best season. And that means it was time to come up with a Dairy Free Macaroni Salad recipes to rival all Macaroni Salad recipes.

But, luckily, you’ve come to the absolute right place, and I’m here with my recipes to take the stress out of it for you and make it a whole lot easier. I’ve made this for family and my friends and it has gotten the ultimate seal of approval. Whether you make this at home for yourself or bring it to someone’s house for a get-together, you will turn any dairy-free doubters into believers. Plus, the best part is that you’ll have a dish that won’t upset your stomach or make you feel like you’re missing out, so you can just focus on enjoying yourself and your summer.

The sauce for this Dairy Free Macaroni Salad is a combination of avocado oil mayo, dijon mustard, and maple syrup that creates a blend of flavors completely reminiscent of OG macaroni salad, but without the dairy.

The celery and carrots give everything a nice, refreshing crunch to add some texture to the dish. In terms of substitutions, I definitely recommend these two, but you can also add in any vegetables that work well with you! I know some Macaroni Salads use peppers, which unfortunately don’t sit well with me, but feel free to add those in if that is something that makes your stomach happy and satisfies your taste preferences. Like I said, it’s about doing what works for YOU.

Dairy Free Macaroni Salad

Ingredients

  • 1 8oz box 1 gluten free macaroni

  • 1/3 cup 1/3 diced celery

  • 1/3 cup 1/3 shredded or diced carrots

  • 1/2 cup 1/2 avocado oil mayo

  • 1 tbsp 1 dijon mustard

  • 2 tsp 2 maple syrup

  • salt, pepper to taste

Directions

  • Cook your pasta according to instructions on the box.
  • Drain and rinse pasta. Can toss with olive oil to prevent sticking, and let cool.
  • Add celery and carrots to pasta.
  • In a separate bowl, combine mayo, dijon, maple syrup, and salt and pepper to taste.
  • Add sauce to pasta and mix well.
