If you look up the word “addicting” in the dictionary, you’ll see a picture of this Refined Sugar-Free Icing. Kidding, but not really. Icing is one of the things that I missed most in my baking when I first eliminated refined-sugar from my diet and first started SCD. Listen, plain cake and plain cookies are great, but a good icing can really just put a baked good over the top. It’s a fact, and this coconut butter icing, refined sugar-free and all, does just that.
You can use it to decorate cookies, cakes, sweet bread loaves, as a dip for fruit – the possibilities are practically endless for this refined sugar-free icing.. No matter what you use it for, you’ll find yourself wanting to make it over and over again because, as I said, it’s addicting. Sorry, I’m not sorry.
Refined Sugar Free Coconut Butter Icing
INGREDIENTS:
¼ cup of coconut butter
1-2 tbsp honey
Almond milk as needed
DIRECTIONS:
- Melt the coconut butter in a saucepan on low heat and add in 1-2 tbsp of honey, stirring well.
- Whisk in almond milk until it becomes smooth and creamy and the consistency of thick, creamy, and smooth icing.
- Adding in vanilla extract is optional, but what is not optional is eating this frosting with everything. enjoy!
