Gluten Free Popcorn Chicken made in the air fryer. Yes, you’re reading that right. No, you’re not dreaming. This recipe is everything you need and more, and it’s seriously a gluten free dream come true. Popcorn chicken is definitely one of those foods that, after being diagnosed with Crohn’s disease, I never thought I’d be able to have again. Typically, it’s made with a bunch of ingredients that severely hurt my stomach (buttermilk, gluten, etc.) Not to mention that regularly fried food is one of my stomach’s biggest enemies as well.

That’s why this Gluten Free Popcorn chicken is made with only a few simple, tummy-friendly ingredients and made in the air fryer to give it that beautiful crunch, without the stomach upset I get from normal fried foods. I absolutely love my air fryer, and it’s definitely one of the kitchen appliances that I currently can’t live without.

All you need to make Gluten Free Popcorn Chicken is boneless, skinless chicken, eggs, plantain chips, salt, and pepper. Plantain chips are absolutely the secret ingredient here. Adding barbecue sauce on the side isn’t required, but it is highly recommended.

Gluten Free Popcorn Chicken

Ingredients:

Boneless skinless chicken tenders
Eggs
Plantain chips
Salt, pepper to taste
BBQ Sauce

Directions:

1. First, cut your chicken tenders into bite size pieces.
2. To make your breading mixture, either pulse plantain chips in a food processor until larger crumbs form or, if you want to do it by hand, place plantain chips in a ziplock bag and crush with a rolling pin.
3. Set up your breading station by placing the crushed plantain chips in one bowl, and beaten eggs, seasoned with salt and pepper, in another (if your plantain chips are already salted, can omit extra salt)
4. Coat your chicken pieces in egg wash, and then coat the chicken with the plantain chips. Press chips into chicken to ensure full coating.
6. Place your breaded chicken pieces into your air fryer (sprayed my air fryer basket with avo oil to prevent sticking) and air fry at 400 until golden brown.
7. Serve with BBQ sauce and enjoy!
