Back in action and bringing you lasagna, Gluten-Free, @palmini_pasta Lasagna with my Dairy-free Cashew and Chive Ricotta recipe to be exact!
I posted a poll on my stories the other day, and the majority of you voted for the one below! But, I have to say, every picture of this lasagna with dairy-free cashew ricotta makes me drool because I cannot get over how good this meal is. Truly one for the record books. @palmini_pasta lasagna sheets are plant-based and made from hearts of palm (can use code THENOGLUTENGIRL5) and they make all lasagna dreams come true when paired with my dairy-free cashew ricotta. It even received the family seal of ultimate approval, which means you know it has to be legit.
Dairy Free Cashew Ricotta:
Ingredients:
2 cups of cashews (see below for details about pre-soaking them)
1 cup of almond milk (can use more or less depending on your desire consistency)
2-4 tbsp dried chives
Salt and pepper to taste
Squeeze of lemon juice
Directions:
- Soak 2 cups of cashews in water overnight
2. Drain and rinse cashews and add to food processor
3. Pulse the cashews and slowly at in ¼ cup of milk at a time until it reaches desired ricotta-like consistency. Add in the dried chives, salt, pepper, and lemon juice.
Lasagna with Dairy Free Cashew Ricotta Step-by-Step:
Ingredients:
2 packages @palmini_pasta lasagna sheets
Dairy Free Cashew Ricotta (see recipe above)
1 lb turkey meat
Approx. 1 jar of your favorite pasta sauce
Dairy-free or low lactose cheese for topping
Fresh basil
Directions:
- Start by making your cashew ricotta as per the directions above. Will want to soak the cashews overnight.
2. Once the ricotta is made, brown your ground turkey in a pan (with italian seasonings of your choice) and add in your pasta sauce.
3. Drain and rinse your @palmini_pastaLasagna noodles and pat dry.
4. In a non-stick baking dish (mine was 9×9), start with a thin layer of your sauce and ground turkey on the bottom. Then, begin the layering: first layer your palmini lasagna sheets, spread the dairy free ricotta on top of that, then add a layer of sauce and ground turkey on top of that, and repeat. Repeat until you reach the top of the baking dish, then add a layer of the cheese of your choosing.
5. Bake at 375 for approx 30 minutes (can cover with foil to cook for part of the way if the top gets to brown)
6. Top with fresh basil and enjoy!
