Speaking of trying my Paleo Pumpkin Pie Cookie Dough Dip for yourself, this recipe has the most remakes by all of you out of any of my recipes. I want to cry (happy tears, of course) every time I see someone remake one of my recipes. I know that sounds dramatic, but I am dramatic. So, it’s fine. My goal with every single recipe I post and share and make is to show you that living life with a chronic illness and dietary needs does not need to stop you from eating food that fill your souls and your stomach (in a good way, though, we don’t want you bloat). I absolutely still go through spurts where I get in a mood and can’t help but ask ‘“why me?” as I find myself down the habit hole, scrolling through pictures of gluten-filled cookie dough concoctions on the internet. But, then, I stop myself and I say to myself “I have the power and the ability to make these foods in a way that works for me. I don’t have to miss out. I just have to get creative, imaginative, inventive.” My deepish wish is that my recipes help you to realize that, too. I hope that showcasing my adventures and creations in the kitchen will inspire you and prove to you your dietary “restrictions” do not and should not stop you from living a full, otherwise unrestricted life.

Paleo Pumpkin Pie Cookie Dough Dip

INGREDIENTS:

2/3 cups organic canned pumpkin purée⁣

1/4 cup + 1 tsp honey ⁣

1 tsp vanilla ⁣

1/4 cup almond butter ⁣

1 1/2 cups of almond flour ⁣

1 1/2 tsp pumpkin pie spice ⁣

As many chocolate chips as you want (omit if strictly SCD) ⁣

⁣DIRECTIONS:

  1. Mix all the ingredients together and that’s it. That’s literally it. Ideal things to dip with include fruit (served it with apples for everyone on football Sunday and it was a hit), carrot chips (don’t judge), and a very, very big spoon.
