1 sweet or yellow onion
2 tbsp olive oil or dairy free butter
Splash Balsamic vinegar
Salt, pepper to taste
Gluten free and dairy free puff pastry
Dairy free mozzarella cheese
1 egg for egg wash
Peel and cut onions in half from root to stem, and slice into thin strips
In a pan over medium heat, melt 2 tbsp of dairy free butter or olive oil. Add the onions to your pan and add salt and upper to taste. Cook, stirring occasionally, until onions begin to soften and add in balsamic vinegar. Reduce the heat to medium low and continue to let the onions caramelize, stirring frequently.
Cut your thawed puff pastry into twelve equal sized squares.
In a greased or non-stick mini muffin, place each puff pastry into the muffin well. Add a layer of dairy free mozzarella, your caramelized onions, and another layer of cheese on top. Brush the sides of the puff pastry with en egg wash. Bake at 400 for 20-25 minutes, depending on your oven, until puff pastry is golden brown.
